Since 2013 Rydges Esplanade Resort in Cairns has been lucky to have had Ben Canham as its executive chef. It is Canham’s ongoing commitment to creating delicious and fulfilling dining experiences that keeps guests coming back for more, while securing a string of culinary wins, including second place in this year’s Australian Culinary Federation awards for signature restaurant, CHB.

Canham says it is no secret that consistent, quality dining relies on a simple recipe of great service, fresh seasonal produce sourced locally and a good dose of excitement and flair.

“CHB’s much loved Fire and Ice buffet has established itself over the years as its own brand of quality dining in Cairns. It works on the basic principle that fresh is best. Add to this a choice of hot and cold dishes, seafood, prime cuts of meat, vegetables and multicultural flavours and condiments, and you have a dining experience that fulfils all tastes and appetites.”

Canham says that you can have the best food in the world, but if you don’t have the ambience or service sorted, the dining establishment will fall flat or disappoint.

“For CHB, we have every element working in sync and it is something we are continually working at to further hone and improve. In the case of Fire and Ice, the cherry on top would have to be the excitement of our in-restaurant, theatre-kitchen, which provides guests with an up close view of our chefs at work. Diners love the opportunity to select their own ingredients – be it pasta and herbs and spices or fish straight from the trawler, cooked to their specifications with skill and flair over the flaming grill. This sort of dining never goes out of fashion!”

A chef of many years of experience, Canham loves his job at Rydges Esplanade Resort.

“I am so happy here and proud of my team,” he says. “As a team we share a common goal to exceed our guests’ expectations every time. We do this with a view to always maintaining a high standard, which, in turn, shines the light on our hotel’s quality cuisine and service.

Fire and Ice is available seven nights a week from 6 to 9pm. An all-day dining menu is also available for breakfast, lunch and in between meal times.
